* 3 cups shredded unsweetened coconut flakes I used finely shredded
* 1 cup coconut oil, melted
* 1/2 cup monk fruit sweetened maple syrup Can substitute for any liquid sweetener of choice-

Instructions
1.  Line a large plate or baking tray with parchment paper and set aside.??
2. In a large mixing bowl, combine all your ingredients and mix very well. Lightly wet your hands then form small balls with the batter, placing them 1-2 inches apart on the lined baking tray.??
3. Using a fork, press down onto each cookie. Refrigerate until firm. ??

Recipe Notes
* Depending on the texture you are after, you could reduce the amount of sticky sweetener to 1/4 cup.
