Dairy Free Paleo Cream Cheese
Ingredients:
* 2 cups soaked raw cashews to make: soak in hot water for 1 hour until soft (if you can soak them overnight that's even better!).
* 1/4 cup lemon juice
* 3 tablespoons water
* 2 tablespoons coconut oil
Directions:
1. In a food processor blend the soaked cashews (drain water for the cashews before blending) until they turn into a coarse texture. Then add the rest of the ingredients and blend until completely smooth! ??
2. Once the cashew mixture turns into cream cheese consistency, use it or store in the fridge for up to 1 week.
